The Gift
It is my intention to share this recipe with you, the reader, with the hope of improving just one life. Beginning with "Momma Kathy's Magic Muffins" over 25 years ago, I've improved upon this creative idea for possible commercialization. I see now that each improvement was intended to promote my own health.
Walking along my "road of thought", I've discovered some of us are given precious gifts. These gifts can only be shared with love. There is no price tag for a healthy body. From my healthy heart to yours, I hope you enjoy my gift.
I am not a doctor nor a nutritional expert. This recipe and my information has been gleaned from my own life experiences. Learning how to "eat to live" inside of this body has required creative and adaptive thinking on my part. Experience has proved the dramatic impact certain high-glycemic and non-organic foods have on this body I inhabit. This has taught me to seek balance, to keep all things in moderation, and eliminate chemicals whenever possible. It makes a difference to respectfully ask this body, preferably prior to and not after the act of eating, what she needs-just for today- to remain healthy. It is an act of kindness and compassion to one's own self. Eating to live and not living to eat is the hardest thing I've ever done.
For those who follow the Specific Carbohydrate Diet (SCD), this bread can be made with using only pecan or almond flour. Over the years while learning what my body CAN eat to remain healthy, I have used a variety of combinations of amaranth, quinoa, millet, and brown rice flours, walnuts, pecans and almonds. If eating this bread, it is important balance L-Lysine and L-Arginine. Amaranth and almonds are very high in L-Arginine (this amino acid imbalance can be a trigger for Shingles or Herpes outbreaks). I also take probiotics to keep the flora happy. Carbs seem to feed the unfriendly bacteria which throws a sensitive gut out of whack in a hurry.
